They exclusively use the highest-grade A5 Yonezawa Beef from Yamagata Prefecture, crafted into wagyu sushi by master chefs with 30 years of experience - truly worthy of being called "edible jewels." The sushi rice uses the premium "Tsuyahime" brand rice from Yamagata Prefecture, seasoned with red vinegar to perfectly complement the wagyu's rich flavors. The marriage with premium ingredients like Hokkaido Bafun Sea Urchin and Ossetra Caviar is simply extraordinary.

The wagyu sushi is elegantly presented in a luxurious wooden box. When I opened the lid, I was immediately struck by its stunning presentation.

The restaurant's specialty lies in their wagyu sushi featuring over 20 different cuts of beef. They masterfully prepare rare cuts like sirloin, zabuton (chuck flap), and tongue, each with specially tailored seasonings and cooking methods to bring out the natural umami of the wagyu. The sushi rice is seasoned with citrus vinegar, creating a perfect balance with the rich wagyu flavors.

My must-try recommendation is their signature "Uni Dog." This luxurious dish combines premium Bafun sea urchin with wagyu beef. When eaten, the rich sweetness of the uni spreads across your palate, followed by the juicy umami of the wagyu in perfect harmony.
