I ordered the Benifuji course, which includes appetizers, 7 types of skewered items (rock fish, local pork, and Koshu beef), houtou noodles (Yamanashi's signature flat noodles), and dessert. You can grill the skewers yourself wearing cotton gloves, similar to a BBQ experience. The meat, slowly grilled over carefully selected charcoal, has concentrated umami and exceptional flavor! The houtou is loaded with vegetables in a delicious broth packed with vegetable essence.

The anticipation while waiting for your skewers to cook over the irori creates an exciting atmosphere. Recommended for those seeking a unique dining experience.

The simple preparation highlighted the pork's natural umami.

Live piano performances by professionals are available during weekend lunches and Saturday dinners. The healing music and refined cuisine promise a special experience.

A memorable menu item is the Volcanic Stone Bomb Shabu-shabu. The iron pot with heated volcanic stones contains konbu dashi broth, where you can enjoy shabu-shabu style local Yamanashi brand meats (Kai AK Pork, Koshu Beef, Koshu Chicken, Mt. Fuji Venison) and locally-sourced vegetables. When you dip the meat in the broth, the konbu dashi adds an exceptional flavor!

Another interesting dish is the Pasta Houtou, which uses local Houtou noodles instead of pasta. I'd like to revisit to try this fusion dish.

This spectacular presentation has gained popularity on social media. Due to its large portion size, it's recommended to share with family or friends.
